Recipe of the week September 7th – Kumara Soup

Kumara Soup – Compliments of Total Organics


  • 6 – 7  good sized organic red kumara, chopped into chunks 
  • 1 – 2 good sized organic radical kumara, chopped into chunks 
  • 1 – 2  large organic onions, chopped 
  • 2 tablespoon chicken style seasoning or stock 
  • Salt to taste 
  • 2 teaspon curry powder or to taste 
  • 1 teaspoon cumin
  •  1 400ml can of coconut cream 

How to cook:

Put kumara, onions and stock in a large stockpot, cover with water and cook together until kumara and onion are soft.  Blend until creamy (a stick blender works well).  Add salt, spices and coconut cream.  Reheat as needed.  Pour a drizzle of coconut cream on top when ready to serve.
